monday's miscellany

today i'm linking up at lowercase letters for miscellany monday.

1.  for the past 8 years that i've known my sweet husband, i've thought he looks like johnny depp (of course i think he's way better looking than the movie star).
this past week my husband was at a trade show for his company, and someone told him he looked adorable husband said, "my wife thinks i look like johnny depp."  the blunt gentleman that my husband has never met before said, "i think your wife needs new glasses." 
a.) i don't wear glasses...and b.) i don't have a b.
maybe it's just me

2.  meet clara
i don't think she's ever been introduced. 
she's our sweet doberman that we've had for almost 5 years now.
she's an 8 years old rescue, a 65lb lap dog who's afraid of thunderstorms.

3.  confession
i think i'm a closet chocoholic! 
there, i said it. 
for many years i've said i don't really like chocolate...
and i really don't like a lot of it, but as i've become more hormonal matured, my tastes have changed. 
some chocolatey things i love:
homemade hot chocolate

three muskateers bars
edy's chocolate fudge brownie yogurt
immaculate baking co's triple chocolate cookies (they're also for a good cause)
and this wonderful, fluffy, lush, aptly named chocolate dream

carrabba's sogno di cioccolata "chocolate dream"
"a rich fudge brownie brushed with Kahlua, with velvety chocolate mousse, fresh whipped cream and homemade chocolate sauce" (carrabba's menu description)
the hubs & i will split a meal at carrabba's just to get this deliciousness...if you've never had it, trust's heavenly

hidden caramel chocolate cupcakes

here it is, the recipe you've been waiting for (since monday, at least)...
hidden caramel chocolate cupcakes

for the deliciousness, i used my vegan chocolate cupcake recipe that you can find here.

while those are baking, you can get started on the caramel sauce

what you need:
1/2 stick of butter
1/4 cup brown sugar
1/4 cup sugar
1/2 cup of heavy whipping cream

what you do:
melt butter
add sugars and bring to a boil, stirring
add cream and bring back to a boil, stirring constantly.
boil for 2 minutes still stirring.
remove from heat
cool completely

once the cupcakes and caramel are cooled, you will carefully cut a whole into the cupcakes and save the piece of cake you take will be putting this back on, so be careful not to let it crumble apart from cutting.

fill the cupcakes with the cooled caramel and retop with the cake...don't worry if the top sticks up a bit, you can cover it with icing.

for the icing, i used my favorite semi-homemade whipped topping...dream whip.  i followed the directions on the package, and added 2 tablespoons of cocoa powder.  you can use whatever your sweet tooth desires!
since i used whipped topping, and it needs to be refrigerated, i didn't ice them until we were ready to eat them, otherwise you'd have to store the cupcakes in the fridge as well.
if you don't use this icing, or decide not to frost them until it's time to devour them, store them covered at room temperature.

miscellany monday

hottie in glasses
my husband got new glasses (because his old ones flew off of his face over the side of the fishing boat into the ocean never to be seen again)...and i must say, he's one hot hubby...not that he wasn't before, i just really like these glasses!

9 months
my little love is 9 months old!  i know i say this every month, but i can't believe it's been 9 months!  and yes, that's him standing!  he's crawling, standing, has 6 teeth, and can throw a ball!

my sweet hottie husband brought this home for me as a "just because" surprise!  i have been wanting one for a while and imagine my surprise when he carried this through the door!  i've been inspired by all of the amazingly fun sewing projects in the blog-o-sphere and can't wait to try them!  you can expect to see my crafty diy projects in the near future...

lately i've been completely obsessed with baking cupcakes!  this baby was my latest creation...check back later this week for the yummy gooey goodness how-to recipe!
