no complaints please...

this past week, i went to a local grocery store to use a rain check i had for boneless, skinless chicken rain check was for $1.79/lb! i think that's an amazing deal!! my rain check was for 15lbs...i only bought 11 because of freezer room, but anyways...i like to open each package and use press-n-seal to freeze each piece of chicken individually.  the packages had 3 pieces of chicken in them.  when i pulled out the chicken, two of them where still each package.  i got so irritated...i started thinking, "well, obviously someone got lazy and didn't do their i'm going to have to get out my cutting board and cut these apart myself!"  and then i became uber ashamed...of myself!  why was i getting irritated?  i bought the chicken for $1.79lb!  i got in my car and drove to the store where i used a convenient rain check to purchase chicken - featherless, boneless, and skinless -in a convenient package...i used my convenient debit card, and then got back in my car and drove home to my air-conditioned 2 story house to put the meat in my convenient freezer...

how completely thoughtless, ungracious, ungrateful, inappreciative, self-centered, and selfish am i!?!

 i stopped myself and thought about the many that can't get in a car and go to the store and buy food!  my sinfulness reared it's ugly head!  scripture in philippians came to mind to remind me:  "do everything without complaining..."  instead of complaining about having to cut up the chicken, i should've been thankful for even being able to purchase it! 

Therefore, my dear friends, as you have always obeyed—not only in my presence, but now much more in my absence—continue to work out your salvation with fear and trembling, for it is God who works in you to will and to act according to his good purpose. Do everything without complaining or arguing, so that you may become blameless and pure, children of God without fault in a crooked and depraved generation, in which you shine like stars in the universe as you hold out the word of life—in order that I may boast on the day of Christ that I did not run or labor for nothing. -Philippians 2:13-16

happy birthday, ashley!

today is my beautiful, little sister's 26th birthday!  that makes me feel old.  we are spending the day with her, and tonight, i'm making manicotti and a chocolate cake to celebrate!  she is a full-time mom and event planner (on the side).  she's super cute and creative!  you can check out her blog here!  i pray the lord blesses you with many, many more!  love you!

jude now has a tooth!  i can't get a picture of it though!  it's still not all the way in, so it's hard to see.  but, his smile is no longer gummy.

he is almost crawling.  right now, he looks like he's practicing for war...pulling himself across the floor with his hands, dragging his legs behind.  it's cute, and i'm so not ready for him to be preparation here we come!

i'm completely loving target brand diapers!  they are great!  they are an amazing price for a lot of diapers, and they are quality!  i actually like them better than pampers and huggies, and not just because they are cheaper...we haven't had any leakage since we started using them!  and in today's economy...

last weekend, my wonderful in-laws watched jude for us, and the hubs and i went on a much-needed date!  it was fun, but of course, i worry about my little man when i'm not with him!  anywho...we went to a movie...inception...if you haven't seen it, get out and go!  it's excellent!

chicken pot pie, yum!

i love chicken pot pie...meat, veggies, and carbs, all in one pot!  it's not healthy, but it's a delish comfort food!  here's my fave recipe:

2 lbs chicken breasts, cubed
2 tablespoons poultry seasoning
olive oil (to cook chicken in on stove)
2 bags of frozen steamfresh mixed veggies (i love carrots, peas, green beans, and lima beans)
2/3 cup butter
2/3 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
3-1/2 cups chicken broth
1-1/3 cups milk
4 (2 packages) 9 inch unbaked pie crusts

Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, coat pan with olive oil.  Season chicken with poulty seasoning.  Cook chicken until done. 

Cook steamfresh veggies by the instructions on the bag.  Pour in a large bowl, add the chicken, mix, and set aside.
In another saucepan over medium heat, melt butter. Stir in flour, salt, and pepper. Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat, and mix with the chicken and veggies.  

Allow pie crusts to sit out for a few minutes before unrolling, otherwise, they will rip.
Spray the bottom of a 13x9in pan with cooking spray.
Cover the bottom of the pan with two of the crusts.

Pour filling over the pie crusts.  Cover with top crusts, seal edges.  (I fold the dough over because I love the crust, but you can also cut away the excess). Make several small slits in the top to allow steam to escape.

Bake in the preheated oven for 30 to 35 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving. 
Enjoy and take a nap!

i've been super inconsistent with blogging lately!  i'm trying to get back into the swing of things.  we (jude and i) went on a little trip to visit my grandparents (the great-grands) in florida.  my mom, sister and nephews went as was a little trip without the hubs' was nice to visit the family, but i really missed caleb and was so glad to see him after 7 days!!  here are a few highlights...

blueberry bread pudding

i have never made bread pudding before this!  we like to buy publix baguettes every once in a while to eat with olive oil for dinner, but i always end up throwing half of it away.  not this time!  i decided not to waste it!  the hubs loved it!  it was good, and would be a great breakfast!  we ate it for dessert!  hope you enjoy!
