my nephew, austin wanted to hold jude...so cute!
jude is in a stage right now where he just stares at his hands, so it's so hard to take a picture of him.

greek chicken pasta

we eat a lot of chicken...
i like it, but it's so hard for me to come up with creative fast ways to cook chicken.  usually, we end up eating some sort of chicken on the stove and a salad....healthy yes, creative, no.  it's boring!  this is a great recipe if you are looking for something different.  i got it from allrecipes.com...a great website if you are looking for recipes. 

prep time: 15min      cook time: 15min      ready in: 30min   
serves 6 

Ingredients
1 pound uncooked pasta
1 tablespoon olive oil
2 cloves garlic, crushed
1/2 cup chopped red onion
1 pound skinless, boneless chicken breast meat - cut into bite-size pieces
1 (14 ounce) can marinated artichoke hearts, drained and chopped
1 large tomato, chopped
1/2 cup crumbled feta cheese
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
2 teaspoons dried oregano
salt and pepper to taste
2 lemons, wedged, for garnish

Directions
Boil pasta and drain.

Heat olive oil in a large skillet over medium-high heat. Add garlic and onion, and saute for 2 minutes. Stir in the chicken. Cook, stirring occasionally, until chicken is no longer pink and the juices run clear.

Reduce heat to medium-low, and add the artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano and cooked pasta. Stir until heated through, about 2 to 3 minutes.

Remove from heat, season to taste with salt and pepper, and garnish with lemon wedges.

 these pictures aren't great!  mine doesn't look as good as some of the other pictures on the net because i put a lot more feta than the recipe calls for.  but it tastes so good! the feta melts and mixes with the lemon juice to make a great sauce.  yum! hope you enjoy! please let me know how you like it!

i love musicals.  sometimes (ok, most of the time) i wish that real life was like a musical...you know, where people "randomly" break out into an "impromtu" song and dance about what's going on at that moment, and everyone around knows the choreography that goes along with it.  how fun would that be.  it would make my visits to the obgyn or dentist office a little bit more fun.  my husband thinks i'm really silly for thinking this...i don't see why...

last week was my 28th birthday! 28...
only two more years til the big 3-0!

my favorite bible verse is joshua 1:9

what an awesome promise: the LORD is with me wherever i go!

blessed.

that's what i feel i am. 
i am a wife and mother!
my handsome husband is wonderfully amazing
 my sweet boy is healthy and a little ball of cuteness. 
my family is a handful of crazy and fun. 
i love staying home with my little man, and am blessed to have a husband who wouldn't have it any other way. 
i have parents who love me and my family. 
who raised me to know what's right.
i'm loved by an omnipotent father who knew i'd be here this very moment thinking these very things. 
he chose to love me and save me. wow!
i am alive in christ.
blessed i am.

fabulous friday

good friday to you! 
it is a good day for those that are in Christ, no matter our circumstances.  He is goodHe is our rock, our hope, our courage, our strength, our salvation

happy happenings

it's been a little crazy around here, which is why i haven't had time to blog...this is what we've been up to...

we started solid foods...


 
we started sleeping on our side, and we love holding on to this muslin cloth during naptime...


 
we had our first mother's day...


 
we had special visitors and visited special people...

we turned 5 months old...
