hidden caramel chocolate cupcakes

here it is, the recipe you've been waiting for (since monday, at least)...
hidden caramel chocolate cupcakes

for the deliciousness, i used my vegan chocolate cupcake recipe that you can find here.

while those are baking, you can get started on the caramel sauce

what you need:
1/2 stick of butter
1/4 cup brown sugar
1/4 cup sugar
1/2 cup of heavy whipping cream

what you do:
melt butter
add sugars and bring to a boil, stirring
add cream and bring back to a boil, stirring constantly.
boil for 2 minutes still stirring.
remove from heat
cool completely

once the cupcakes and caramel are cooled, you will carefully cut a whole into the cupcakes and save the piece of cake you take will be putting this back on, so be careful not to let it crumble apart from cutting.

fill the cupcakes with the cooled caramel and retop with the cake...don't worry if the top sticks up a bit, you can cover it with icing.

for the icing, i used my favorite semi-homemade whipped topping...dream whip.  i followed the directions on the package, and added 2 tablespoons of cocoa powder.  you can use whatever your sweet tooth desires!
since i used whipped topping, and it needs to be refrigerated, i didn't ice them until we were ready to eat them, otherwise you'd have to store the cupcakes in the fridge as well.
if you don't use this icing, or decide not to frost them until it's time to devour them, store them covered at room temperature.

serve with a large cold glass of organic skim milk, and enjoy!
