chicken tortilla soup

my little one is sick right now, so i need to make quick, easy dinners for my hubs and i to eat when he gets off work...this is one of my favorite soups to make because it's super easy to make, and you can play with the ingredients based on what you might have, and it's really good!  we aren't soup people, but this is one that i make often.


1 lb boneless, skinless chicken breast
olive oil to coat pan
cumin, oregano, salt, pepper (this is to your taste)
2 cans (14½ oz each) reduced-sodium chicken broth
1 can (15 oz) reduced sodium black beans, drained & rinsed
1 green giant package of white shoepeg corn (the little boxes in the freezer section)
1 can (14½ oz) no salt added diced tomatoes
1 can (4 oz) diced green chilis
1 zucchini cut into half-moons (or smaller)
½ tsp each ground cumin and dried oregano
tortilla chips (again, amount is to your liking)

1.  coat the bottom of a pan with olive oil and heat pan.  cut chicken into bite-sized pieces and season with oregano, cumin, salt, and pepper to your liking.  place in pan and cook until done (this shouldn't take very long because the chicken pieces are small).
2.  cook corn according to package directions in the microwave.

3. meanwhile, add broth to pot at medium heat.  stir in beans, corn, tomatoes, green chilis, zucchini, cumin and oregano.  (i was told by a professional chef that you should never let your soup boil, so i don't)
4. cook until the zucchini is tender. 

5. add chicken to the pot.
6. remove from heat.
7. serve with tortilla chips...(if you add your tortilla chips to your soup, you should crunch them up and let them soften in the soup for about a minute.)
8.  enjoy!!

this soup has about 6 servings...depending on your serving size...

this was the first time i had added zucchini, and i loved it.  sometimes it's hard to get the hubs to eat any veggies other than a salad, so i like to throw em' in as a surprise...
